The Wine of the Future

This stage is designed to help you with some of those more difficult decisions that people make at wine tastings. "Should I buy this wine?" "How long should I store it before I drink it?" This category is intended for tasting wine with a nose towards how the flavors will change (or be enhanced) over time. Some wines are "well structured", which means that they are built to age over long periods of time, which is usually a good thing.

And so, this category contains wines of a wide variety of vintages. So you can taste the differences between "young" wines and "old" wines, and then get a feeling of how one can become the other, over time.
